•2 Ekhtiari Chicken Burger (low fat, low calorie)
•6-7 cherry tomatoes- halved
•½ cup lettuce leaves- finely cut
•2 cucumbers – peeled and diced
•2 tbsp of Spanish olives- thinly cut
•1 red onion- finely chopped
•1 tbsp lime juice
•1 tbsp of olive oil
•Mayonnaise (just for drizzle)
•Salt and pepper to taste
Saute the Ekhtiari chicken burger patties (low fat, low calorie) on a grill pan till they are golden. Once easy to handle, cut them in crouton shapes. They should resemble bread croutons.
Now place all the salad(vegetables) ingredients in a mixing bowl and season with lime juice, olive oil, salt and pepper.
Keep this mix aside for about 15 minutes so that all the flavours set in.
Now top the salad with chicken burger croutons and drizzle mayo before serving.
